English-Muffin Egg Pizzas

Today, I am bringing with a protein-rich, meat free breakfast for kids. This is quite simple and can be ready in 10 minutes maximum.


We will use hard-boiled eggs which proves to be so delicious. Peel and slice the eggs and place them on top of English muffin-halves along with a glug of olive oil, sliced tomato, and shredded mozzarella before toasting. The kids love these open sandwiches for a snack or meal. Having said that, it taste much better when the cheese melts down. 

Ingredients

  1. 4 English muffins
  2. olive oil
  3. tomato slices
  4. 2 hard-cooked eggs, sliced
  5. grated mozzarella
  6. oregano
  7. kosher salt
Directions

  1. Make Hard-Cooked Eggs.
  2. Toast 8 English-muffin halves and place on a cookie sheet.
  3. Drizzle each with olive oil, then layer on tomato slices, hard-cooked egg slices (½ an egg each), and a little grated mozzarella. Sprinkle with oregano and kosher salt.
  4. Broil 5 minutes or until the cheese melts.
