Tuna Pasta Salad

If you are a working personnel, do you have enough time to prepare lunch? I bet no, this lunch box which I am showing now is quite simple and fast enough that you will love to have it every day. This will make a lovely lunch. I used spiral pasta but you can use other varieties as well. You will love the cherry tomatoes which gives you a mouth littering taste. 

Preparing quick does not mean that you should compromise on the health as well. This is quite healthy and is good for both adult as well as kids. The below instruction and ingredient will serve for 4 people and it will take just 20 minutes to prepare. Without further delay get down a pen and paper. note down the ingredients.



Ingredients

  1. 500 g pasta (recommend large spirals)
  2. 420 g four-bean mix
  3. 425 g tuna in water
  4. 250 g cherry tomatoes
  5. 1⁄4 cup gherkin
  6. 1⁄2 cup mayonnaise (whole-egg)
  7. 2 teaspoons white vinegar
  8. 1⁄4 cup fresh parsley (freshly, chopped)

Directions

  1. Drain four-bean mix, rinse and drain.
  2. Drain and flake tuna.
  3. Quarter cherry tomatoes.
  4. Finely chop gherkins.
  5. Cook pasta in a large pot of boiling salted water as per manufacturer’s instructions. Drain well.
  6. Place pasta, beans, tuna, cherry tomatoes and gherkins in a large bowl.
  7. Whisk mayonnaise, white vinegar and fresh parsley in a small bowl until combined. Season with salt and pepper.
  8. Add mayonnaise mixture to pasta, tossed until combined.
  9. Serve pasta salad with fresh fruit.
