Chicken curry with new potato bake in tray

This is quite simple recipe and a healthy dish bake in tray with garam masala, turmeric, ginger and garlic paste. Not giving many gyan let’s get down to the ingredients and method.

Ingredients

·        Chicken drumsticks (8 pieces)
·        Olive oil (3 tbsp)
·        Ginger and garlic paste (1 tbsp)
·        Garam masala (1 tbsp)
·        Turmeric (1 tbsp)
·        150ml pot natural yogurt
·        500g new potatoes
·        4 large tomatoes chopped roughly
·        1 red red onion, finely chopped
·        Small pack coriander, roughly chopped

Direction to cook

In a large bowl put the chicken drumsticks along with 1 tbsp oil, garlic ginger paste, garam masala and 2 tbsp yoghurt. Until it is coated mix with your hands together. Let it marinate for half an hour. Heat the oven to 180c/160c fan/gas.
Put the potatoes in a large roasting tin with the remaining oil and plenty of seasoning. Add the chicken drumsticks and bake for 40-45 mins until cooked and golden.
Scatter the tomatoes, onion, coriander and some seasoning over the chicken and potatoes, with the remaining yogurt served on the side.
