Spinach and Cheese Pasta

When it comes to Italian food, the first dish I would pick up is the Macaroni or Pasta. Today I am bring you a different type of pasta preparation where I used tomatoes, spinach and cheese. You may add chicken if desired. The preparation may take around 25 minutes, cook for 15 minutes and it will be ready to serve at 40 mins. Wow! how quick it is, isn’t it?

Ingredients

1.    1 pack penne pasta (500 grams)
2.    2 tbsp olive oil
3.    1/2 cup onion (finely chopped)
4.    1 clove garlic (minced)
5.    3 cups tomatoes (finely chopped)
6.    1 cup fresh mushrooms (sliced)
7.    2 cups spinach leaves
8.    Salt to taste
9.    Red pepper flakes (a pinch)
10.Cheese, crumbled



Directions

1.    In a large pot, boil some water and put some salt in it. Add the pasta to cook in it. Drain the water it when it is soft. 
2.    Meanwhile, in a pan, heat olive oil and add onion and garlic. Fry it till it the onions become golden brown. To it add tomatoes, mushrooms and spinach.
3.    Add a pinch of salt to the mixture and little pepper and chilli flakes. Cook till the tomatoes are heated and the spinach becomes wilted.
4.    Add the cooked pasta to the mixture and cook for another 2-3 mins. Serve hot.
